We have optimised eating into something that happens at a desk, in a car, or standing at a bench. The food may be excellent. The eating rarely is.

Why it matters physiologically

Eating in a calm state supports digestion, satiety signalling and how much you actually enjoy the food, which in turn shapes what you reach for next.

A long lunch is not indulgence. It is the part of the meal that most of us have deleted.

Start with once a week

One meal, no screens, sitting down, with someone. Everything else in the Mediterranean pattern gets easier from there.
